I realize that’s a long name.
And it’s not super easy to say either.
Once you eat one tho, that part about them won’t be as important. 🙂
I got my inspiration from a Facebook recipe going around. Switched it up a little bit and it made for an interesting, yummy, grain-free lunch! 🙂
Here’s the recipe so you can enjoy too!
- Tomatoes
- Real Salt
- Black Pepper
- Grated Parmesan/Romano Cheese
- Oregano
- Slices of Raw Feta Cheese or Cheese of your choice
- (Raw Mozzarella would be stellar too!)

Slice tomatoes and place on parchment paper lined baking sheet. Sprinkle with toppings and bake in 420* oven for 12-15 minutes, depending on how you like them cooked and the cheese either just melted, or browning and slightly crispy. Enjoy with bacon (like I did)!
You could also add other fun toppings like black olives, mushrooms, dabs of pizza sauce, minced garlic or even pepperoni! Let your imagination (and taste buds) go on this one!
