Day 2 of our 2 week challenge

So we survived Day 1!

I knew we would. Sort of. It wasn’t hard until I couldn’t decide what to have for lunch. O.o

For supper we had Eggplant Lasagna which is super easy to make, and it was even easier for me yesterday because I had one frozen! So I popped it in the oven for about 4 hours on 250* and it was perfect. I’ll share my simple recipe in another post. We had that with sauteed cauliflower, broccoli, red peppers, onions and minced garlic. Add several dashes of salt and coconut aminos – perfection!

Considering that was a lot of vegetables, we were hungry by 8PM. We had so much going on, so we just threw another smoothie in the Ninja and ate it on the go. 🙂

Today I am going to make my hubby, and doctor’s, favorite grain-free Peanut Butter cookies. They both seem to think they’re even better than a regular white sugar, wheat flour peanut butter cookie, but I can’t quite honestly get on that bandwagon. 😛 I can, however, say that they are the best healthy cookie I have ever tasted. I’ll have to share that recipe too, since I know I certainly wouldn’t like it very much to only get to read about how good the best healthy cookie ever tasted tastes. (Confused yet?) And not even have the chance to try it myself? Ah! 😛

Today’s breakfast was smoothies again. Lunch we have leftover Eggplant Lasagna and raw veggies with homemade ranch dressing. Supper is going to be Garlic Mushroom Chicken with Mashed Cauliflower. 🙂 Hopefully it turns out as good as it sounds!
